BLACK TIGER SHRIMPT

The black tiger shrimp are named for the dark stripes that circle the shell which look like the stripes of a tiger. This species is characterized by these stripes on its shell and it is the largest of all commercially available shrimp and can grow up to 13 inches. Cooked meat is white with pink stripes.

The black tiger shrimp is available year-round and is one of Vietnam's major aquaculture products. Most tiger shrimp is farmed, though a significant amount is harvested from the wild by trawlers.

Farmed tiger shrimp can be found in Soc Trang, Ben Tre, Bac Lieu. Wild tiger shrimp are harvested by trawlers from sea regions of Kien Giang, Tra Vinh, Ca Mau. 

Tiger shrimp are harvested by either being pond-raised or by trawling. They are available year-round and are available in family style, buffet, fine dining, school, healthcare, military, hotel, resort/club, and food contractor segments.

FLAVOR/TEXTURE

This specie has a mild and sweet flavor with a firm texture. The texture is somewhat softer than whites, pinks and browns. Some alternatives can be brown shrimp, pink shrimp, and white shrimp.

SERVING IDEAS

Black tiger shrimp have a notably firm-textured meat. This makes them especially forgiving and easy to work with. You can cook them whole, in the shell, or remove the shells before cooking.

Black tigers, especially those raised in low salinity water, tend to be milder than ocean-caught shrimp. This can be a benefit when it comes to easily pairing them with the broadest variety of ingredients.

PREPARATION

Tiger shrimp are best boiled, steamed, saute'ed, breaded, broiled, or grilled. Shrimp cooks quickly, overcooking will result in a tough product.
